Lemon Pepper Chicken Salad


Lemon Pepper Chicken Salad (A Healthy Summer Meal)







To go with my current diet I have been trying to make all of my meals more healthy but didn't want them to be to boring either so this is the first recipe I put together for a summer family dinner that everyone could enjoy and I wouldn't feel guilty about either.

Lemon Pepper chicken salad ingredients:


1 bag of mixed salad (or two to feed my family)
1.5lbs chicken Brest
1 cup Cherry tomatoes (or sliced and cubed tomato)
1/2 cup cheese (grated)

Dressing :

( I just added these ingredients to my own taste so feel free to change to your own. Also note this was for two bags of salad and a large family.)

2/3 cup lemon juice
1/3 cup vegetable oil
5 Tbs lemon pepper seasoning




STEP ONE: dice or slice the chicken being sure to remove all fat.





STEP TWO: in a small bowl combine your lemon juice, canola oil and lemon pepper and whisk to combine.





STEP THREE: place all your chicken in a fry pan and pour over half the lemon pepper mixture that you have just created. Turn occasionally to ensure evenly cooked throughout.





STEP FOUR: in a salad bowl (or large bowl) combine your bag of mixed salad, diced tomatoes, cheese (and any other veggies you desire) and use the second half of your mixture of lemon pepper dressing. (about a quarter a cup of dressing to 2 bags of salad you can add more to your taste)





STEP FIVE: plate the salad and cooked chicken and enjoy!
